I have noticed that silverbeet seems to be my food of choice at the moment yuk!! Overall I don’t find it a particularly appetizing food - pretty tasteless and just you know…..silverbeet but everytime I open the fridge I’m like mmmmmmmmm silverbeet so let us look at this veggie a little closer….

Silverbeet is a cousin of beetroot.  It is an excellent source of vitamin C and E and pro vitamin A (â-carotene) and like its other cousin, spinach, is also rich in vitamin B6, folate, and contains a wide range of minerals including iron. It has very high levels of various antioxidants including the carotenoids, lutein and zeaxanathin (these work with the eyes) and the flavonoids kaempferol (kaempferol has been reported to increase bile secretions and has ultraviolet-absorbing properties) and quercetin.  Apparently if you have eye issues then you should be eating a lot of silver beet, beetroot and spinach.  What you didn’t realise you didn’t know eh? 
Food today: brekkie - 2 pieces of organic brown toast with golden syrup and a little cheese, snack - freshly juiced carrot, apple and silverbeet (it looks fine unless you stir it then it goes a vomitey green colour), lunch - warm smoked salmon salad, snack - couple of dried figs, dinner - shepherds pie with lamb and kumera topping - beautiful!  Late snack - freshly juiced carrot, apple and silverbeet.  Happy thought of the day:  I didn’t burn dinner lolollol  :)
